The LAVA team has put all their know-how and passion for fine bottles into creating a wine list as precise and expert as it is mischievous. Far from limiting itself to labels or, on the contrary, to a 100% natural selection, the only guideline here is to highlight the women and men who respect their terroir, without bias or borders, and with no other intention than to enjoy good wine sensibly.
Among the many gems on the list, we can find wines from winemakers – such as Domaine Mélanie Pfister in Dahlenheim in the Bas Rhin in Alsace, or the Cuvée Roussane from Luc Baudet, from Clos des centenaires, in the Costières de Nîmes appellation – but also classified grand crus – like Château Rayas in Châteauneuf-du-Pape or Domaine Rémi Jobard in Burgundy. Small and large formats; cuvées from all corners of France and Europe, like Domaine Tamada in Georgia or Azienda Agricola Falletto by Bruno Giacosa in Italy.
Originality of the place, we also discover a growing selection of volcanic wines. Yes, you read that right! Far from being just a curiosity, these wines from mineral-rich volcanic soils are marvelous thanks to their pronounced salinity and smoky character, as well as their beautiful aromatic freshness.
