Originating from Metz, Wilfried Romain studied hospitality and restaurant management before gaining experiences over ten years in France and around the world. From Sur-Mesure** (Paris) to Baudelaire* (Paris), from Matteo’s (Melbourne) to Borago (Santiago), Wilfried Romain has nourished himself on one hand from the discipline and precision of Michelin-starred restaurants, and on the other hand from the exoticism and culinary riches of the ends of the world. Memories and methods brought back in his suitcases, which today, allied with a true mastery of the fundamentals of French gastronomy, form the strength of his dishes.

Revealed to the public during season 13 of Top Chef in 2022, chef-owner of LAVA since March 2024, he has managed to charm both gourmets and the media as well as culinary guides thanks to his travel-inspired cuisine imbued with multiple influences.
