At LAVA, it's not about setting fire. It's about understanding it, channeling it. Listening to it crackle.
LAVA, our call from elsewhere, is set on the heights of Montagne Sainte-Geneviève. A bit hidden, never shy, always incandescent. At the helm: Wilfried Romain. A chef-traveler, former Top Chef, returned loaded with memories, ideas, and spices.
Here, we play with fire. Literally. The embers roar in the kitchen, the smoke dances on the plates, and the sauces coat like a flow of benevolent lava. The menu evolves between memories of Latin America, the shores of the Pacific, and the reassuring base of a reimagined French cuisine. One dish evokes Santiago, another Osaka, a final one Marrakech – but all tell the story of Paris, here, now. This is the paradox of LAVA: to tame the fire to awaken the elsewhere.
