Hi Will! What does it feel like to learn that LAVA is in the Michelin Guide?
“Honestly, it’s crazy. What a year! When I started 15 years ago, Michelin was a distant myth. Today, seeing LAVA mentioned in the guide, right in the heart of Paris 5, is huge. It’s proof that anything is possible when you work hard, surround yourself with the right people, and keep the flame alive. Literally.”
If you had to mentor the younger version of yourself, who wanted to get started today, what would you tell him?
“I’d talk to him about my beginnings abroad: 15-hour days, languages you don’t understand, the struggles of service... Those are the moments that shape everything. I made mistakes, got burned, got cut sometimes... But it’s that journey that made me who I am. Today, at the helm of a signature restaurant in Paris, with wood-fired cuisine and a tasting menu inspired by my travels, I tell myself it was all worth it.”
